Bissara, Moroccan
Bissara is a traditional North African soup made from split peas or dried broad beans, simmered with garlic, olive oil and spices such as cumin and paprika.
Preparation
300g dried split peas (rinsed)
1.2 to 1.5 liters water
3 to 4 crushed garlic cloves
1 to 2 tablespoons olive oil (for cooking)
1 teaspoon ground cumin
1 teaspoon paprika (sweet or smoked)
Salt and pepper to taste
